Every house hold in Southindia, especially Tamilnadu , will have idly dosai batter always at home. They make tasty steamed idlies, crispy dosai almost every day.
The fermented batter is a rich source of good or beneficial bacteria good for our gut and other systems. The batter is the mixture of ground rice,urid dhal .
Nowadays people become more health conscious and show more care to the food they take in and search for better Healthy Recepies.

Even the last left over batter can be converted into Nutritious Healthy Recepie.
Let we quickly roll into the Recepie.
If you have only one cup of batter left. But you need serve for breakfast. No problem. Here are the tips with details to convert it to a Healthy breakfast.
INGREDIENTS:
Left-over idly dosai batter.1/2 cup.
Whole Ragi one cup.
Take one cup of whole Ragi. I always prefer whole Ragi, not the ready-made Ragi flour from shop.
Grind the Ragi to powin a mixer.
Whole wheat flour 1/4cup
Whole wheat flour is got from grinding whole wheat grain. So no nutrient is lost in milling and all kept intact in it with bran and Germ and rich fibre. Whole wheat flour is best when compared to maida with no nutrients in it.
I Dont buy or stock Maida, the so called all purpose flour for any reasons or dish. Even not for bread baking.
Samba rava 1/2 cup.
Samba Rava is again good source of fibre and other nutrients, like whole wheat flour.
Cut onions and chillies.
Curry leaves . Drumstick leaves. Optional.
Curry leaves and drumstick leaves are rich source of iron and other minerals and antioxidants.
Jeera ,salt. Oil.
HOW TO PREPARE:
Batter preparation:
Add the Ragi flour to the left over batter or newly prepared fermented batter.
Add whole wheat flour, Samba rava to it.
Add cut onions, chillies (no need to add if served for kids) jeera, salt for your taste.
Mix all well. Add sufficient water, say 4 to 5 cups. Mix well to get a colloidal consistency.
Keep closed for 15 minutes undisturbed.
After 15 to 20 minutes when you open you may find some change in the consistency of the flour. Add little water if it is very thick. Thick batter will not flow thin easily on Thava. Over watery batter socks more oil into it . So bring the batter to correct consistency. (TIP)
keep dosai or dosa making kal or flat thava on flame.
After it is heated take required prepared batter in saddle and make dosa in medium flame. Add half spoon oil , gingely oil preferred. Cook both sides of dosai by turning.
Ragi flour gives taste in addition to softness with wheat flour and Samba rava add tastes and crispness to dosai. Drumstick and curry leaves add more flavour to the dish.
For full cooked crispy dosai, always maintain the temperature of tawa optimum. Because, too much heat burns the dish and low flame spoils the crispness and takes too much time to cook. (TIP)
Healthy Easy Tasty Ragi Wheat Samba Rava Dosai is ready. Best to serve with coconut chutney even Aby chutney and Sambar for breakfast and dinner.
Better to serve for breakfast rather than dinner , for those who want to keep light dinner tiffin. Light dinners are advised for people with gastric and gut disturbances.
VARIATIONS in Method:
Ragi dosai can be made by other two methods.
In one method :
Soak whole Ragi and rice,urid dhal together for 5 hours. After grinding them fermented for 3 to 4 hours. Then can be used as usual procedure.
In second method:
Dry Ragi flour, after grinding is added with rice flour, wheat flour, Samba rava. Can be used immediately if no need fermented batter or keep closed for 4 to 5 hrs for fermented batter.
